Description Chinse workers at a labeling machine at Fidalgo Island Packing Co., which employed 77 Chinese workers to process and pack salmon. Canneries needed a Chinese labor force because few would do this work. The Smith Butchering Machine, invented in 1903, was commonly known by the derogatory nickname "iron chink" because it replaced Chinese workers.
